Fruity Frozen Fun Treats

To cool off this summer — and possibly evoke some childhood memories of hot summer days — homemade ice pops are just the thing. They’re truly yummy when made with luscious ingredients like blueberries and cream, watermelon, raspberry and lime, or strawberry lemonade. If pops weren’t part of your childhood, just remember — it’s never too late to start enjoying them! As Charity Ferreira, the author of Perfect Pops (a great source for pop recipes) writes, “Pops occupy a sweet spot between gourmet and just plain good.”

Blueberries and Cream Pops

Ingredients

1 ½ cups fresh or frozen blueberries
¼ cup sugar
1½ cups vanilla yogurt

Directions

In a blender, puree 1 ½ cups fresh or frozen blueberries with ¼ cup sugar and ½ cup vanilla yogurt until smooth.

Spoon about half the mixture equally among the molds.

Spoon 1 cup vanilla yogurt equally among the molds, over the blueberry layer.

Spoon the remaining blueberry mixture over the yogurt.

Insert the sticks. If using Dixie type cups and Popsicle type sticks, freeze until partially frozen and slushy (about 30 minutes), then insert the sticks. Freeze until firm. Makes 6-8 pops, depending on size of molds.

Watermelon-Raspberry-Lime Pops

Ingredients

3 cups watermelon cubes
2 cups fresh or frozen raspberries
¼ cup sugar
2 tablespoons lime juice (about 1 lime)

Directions

In a blender, puree 3 cups watermelon cubes, 2 cups fresh or frozen raspberries, ¼ cup sugar, and 2 tablespoons lime juice (about 1 lime).

With a flexible spatula, push the mixture through a fine strainer; discard solids.

Pour the mixture into ice pop molds and insert sticks. If using Dixie type cups and Popsicle type sticks, freeze until partially frozen and slushy (about 30 minutes), then insert the sticks. Freeze until firm. Makes 6-8 pops, depending on size of molds.

Strawberry Lemonade Pops

Ingredients

½ cup sugar
2/3 cup water
1 cup chopped fresh or frozen strawberries
½ cup fresh squeezed lemon juice (about 2 lemons)

Directions

In a small saucepan, combine ½ cup sugar, 2/3 cup water and 1 cup chopped fresh or frozen strawberries.

Stir over medium heat until sugar is dissolved and mixture comes to a simmer. Cook until berries start to soften, about 5 minutes. Remove from heat and let cool.

Pour mixture through a fine strainer into a large bowl, pressing the solids with a spoon. Stir in ½ cup lemon juice (about 2 lemons) and 2/3 cup water.

Pour the mixture into ice pop molds and insert sticks. If using Dixie type cups and Popsicle type sticks, freeze until partially frozen and slushy (about 30 minutes), then insert the sticks. Freeze until firm. Makes 6-8 pops, depending on size of molds.
